The Autumnal Veggie Bowl

In a previous post, we discuss The Autumn Diet in Ayurveda and how to pacify Vata. Here is a very good and quite basic - also incredibly delicious and flavourful - example of a Vata-pacifying dish, to ground yourself and bring you warmth.





Ingredients


Root vegetables to ground yourself:

  • 1 sweet potato

  • 2 parsnips

  • 3 carrots

(You can also use butternut squash or pumpkin, it’ll also work well)


Spices

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon coriander powder

  • 1 teaspoon coriander seeds

  • 4 cloves

  • 2 cloves of garlic

  • 2 cm of ginger root

  • salt & pepper

Instructions


Peel all your veggies and chop chop chop chop! I like big chunks, you do whatever you feel like.

Slice ginger and garlic very finely.

First, steam the veggies, about 2/3 way through. You can also boil them, 2/3 way through as well.


In the meantime, in a frying pat, heat a good tablespoon of ghee or coconut oil. When the oil is hot (not burning though), add the coriander seeds and cloves. Once the coriander seeds start to pop, you can add ginger and garlic finely chopped, and stir for a good minute or two.

Then, add your vegetables and a little water so they can gently finish cooking without sticking to the pan. Add turmeric and coriander powder, salt and pepper. Once you can put a knife through the carrots, it’s all done!


You can serve as such, or with some quinoa or basmati rice. Sprinkle some fresh coriander, and you’re all set!
